Can I use "during" and "since" the following ways?

1. During Master's degree, I took a modern Chinese history course.

2. Since Master's degree, I have been passionate about folk arts.
 
No. You need to say more about the degree. Do you mean Since receiving my Master's degree, Since I began studying for my Master's degree, or something else?

For "during", can I say "during my at time studying for Master's degree, I took a modern Chinese history course"?

For "during", can I say, "During my [STRIKE]at[/STRIKE] time studying for a master's degree, I took a modern Chinese history course"?

You can also say, "my master's degree."

Use capital letters for proper nouns and first letters of sentences.

Not "during my at time studying for Master's degree" but "while studying for my master's degree."

I took a modern Chinese history course on my Master's sounds more natural to me.
