Did you ever hear/see a cuckoo bird?

1. Did you ever hear a cuckoo bird? You can hear it in spring.
2. Did you ever see a cuckoo bird? No, I never saw one before.

In the above quotations, are "it" and "one" interchangeable?

That's unnatural. No native speaker would say "cuckoo bird". They would just say "cuckoo".
