What do we call the person dishing out food in a canteen?

Except 'food handlers', is there any informal or other name we migh use to refer to these people, especially in a university canteen?

Server. Serving person. Dinner lady (probably school, not university).

There is probably some very over-wordy made-up term for it these days - Nutritional Sustenance Distribution Operative perhaps!
